Thai Beef Salad

This looks and tastes amazing, great summer dish and so healthy and simple to make (YUM).

Ingredients

  • 500g beef

  • cucumber

  • tomatoes

  • 1 red onion

  • any mixed salad you like

  • 1 cup Thai basil or regular basil leaves

  • 1 cup fresh coriander

  • 1 long red chilli

  • 1 cup fresh mint

  • 1/4 cup lime juice

  • 1 ½ cup brown sugar

  • 2 tbd brown sugar

  • 2 tbs fish sauce

  • 1 tbs soy sauce

  • 1 tbs grated ginger

  • 2 cloves garlic, chopped

  • sesame oil

Cooking instruction

  1. Grill beef for 10 mins (medium rare please - pink inside). Loosely cover with foil and set aside for 5 minutes.

  2. Combine salad, cucumber, red onion, tomatoes, herbs and chilli to a bowl.

  3. Place lime juice, sesame oil, brown sugar, fish & soy sauces, ginger in a screwtop jar and shae well.

  4. Slice beef into thin strips, combine with salad and drizzle over dressing to serve.
