Sticky Date Pudding
Ingredients
Pudding
1½ cup of pitted/chopped dates
1 tsp baking soda
¾ cups sugar
1 cup self raising flour
1 ½ cups water
60g butter
2 eggs
Double cream for serving
Caramel Sauce
½ cup brown sugar
100 g butter.
½ cup cream
Cooking instruction
Preheat oven to 180 degrees.
9 inch tin lined.
Combine dates and water and bring to boil.
Remove from heat and stir in baking soda.
Place ¾ of dates in a food processor and puree.
Cream butter, sugar, beat eggs, 1 at a time. Fold in the sifted flour with pureed dates and remaining chopped dates.
Bake for 55 mins.
Combine all Caramel sauce ingredients and stir over low heat until it all dissolves.
