Sticky Date Pudding

Ingredients

Pudding

  • 1½ cup of pitted/chopped dates

  • 1 tsp baking soda

  • ¾ cups sugar

  • 1 cup self raising flour

  • 1 ½ cups water

  • 60g butter

  • 2 eggs

  • Double cream for serving

Caramel Sauce

  • ½ cup brown sugar

  • 100 g butter.

  • ½ cup cream

Cooking instruction

  1. Preheat oven to 180 degrees.

  2. 9 inch tin lined.

  3. Combine dates and water and bring to boil.

  4. Remove from heat and stir in baking soda.

  5. Place ¾ of dates in a food processor and puree.

  6. Cream butter, sugar, beat eggs, 1 at a time. Fold in the sifted flour with pureed dates and remaining chopped dates.

  7. Bake for 55 mins.

  8. Combine all Caramel sauce ingredients and stir over low heat until it all dissolves.
